As simple as it is, no salad reigns more supreme in my books than the Caprese Salad.

Take these fine summer flavours and serve them on warm toasted sourdough for a fresh and aromatic open sandwich that’s sure to please during the warmer months.

You could enjoy this as a meal or make smaller ones and serve as an appetizer while you’re busy cooking for your guests.

Serves 1
Take the fine summer flavours of a Caprese Salad and serve them on warm toasted sourdough for a fresh and aromatic open sandwich.

  1. Fresh spelt sourdough – 2 thick slices
  2. 1 Australian garlic clove
  3. EVOO (Extra Virgin Olive Oil)
  4. 1-2 fresh vine ripened tomatoes, thickly sliced
  5. Fresh sweet basil leaves
  6. 1 ball of buffalo mozzarella, sliced OR bocconcini, sliced
  7. 1 Australian garlic clove
  8. Sea salt and cracked pepper, to taste
  9. Balsamic Glaze, to drizzle
  1. Drizzle EVOO on sliced sourdough and place under grill for one minute on each side. Alternatively, heat on a griddle pan. Transfer to serving plate.
  2. Slice garlic clove in half and rub the fleshy centre over the warm sourdough.
  3. Arrange sliced tomato, mozzarella and basil leaves on top of each sourdough slice.
  4. Season and drizzle with aged vinegar or balsamic
