Kate’s Week – Peppered Figs & Seared Tuna Salad
A party of flavours with Kate’s menu tonight! To start we enjoyed an entrée of Peppered Figs, a reciped adapted from George Calombaris’ Hellenic Kitchen Cookbook. A visual feast to behold, the peppered figs with its honey, spices and balsamic glaze went perfectly with the grilled haloumi. Ladies and gentleman I have tasted the best soup ever! I love artichokes, globe, Jerusalem, canned, fried you name it, I love it. Tonight Megsie made a Jerusalem artichoke soup and it was so magnificent. The recipe from memory wasn’t too difficult. I believe you simply cook Jerusalem artichokes in stock, blending after cooking. Add cream and top with a mix of diced granny smith apples, roasted hazelnuts and lime. Megsie also submerged a few tasty scallops in there too. I loved the meal. You can’t go wrong with an Antipasto spread – and you certainly can’t go wrong with a Karolina Antipasto spread! With everything from garlic prawns, roasted capsicum, artichoke, olives, blue cheese, Camembert, salami, smoked salmon, prosciutto, pate and sourdough, this spread was perfect and I loved every mouthful! Yummo is all I can say!! Alyssa’s menu tonight was so delicious. We started off with a most tasty fennel and leek soup with salmon fillet. Each mouthful was different and the salmon brought such an elegance to the dish. The fried shallots and fresh chives sprinkled on top had a surprisingly tasty impact too.
