Vegetarian Eggplant Rolls
Slicing and chargrilling eggplants gives you the perfect wrap for any number of fillings. On this occasion I made a mix of fresh ricotta, organic mozzarella, spring onions and dried oregano. Warming them through created a cheesy gooiness which was extremely satisfying as a light meal.

Lucky me took some time off work last week. My family and I organised to meet in the beautiful coastal town of Woodgate and we all had the most wonderful time. Woodgate, for those of you who don’t know is about 20 minutes out of Bundaberg.
